Vinification and maturing

Night harvest. Plot selection. Each grape variety is vinified separately
• Destemming of the grapes
• Direct pressing on a pneumatic press
• 24-hour skin maceration
• Cold settling (9-11°C)
• Yeast with selected yeasts
• Fermentation at controlled temperature (15-17°C)
• Pumping of wines under carbon dioxide
Aging: 40% in vats and 60% in French barrels for 5 months

Tasting notes

With a beautiful pale yellow color, this wine develops delicate floral (violet, acacia) and fruity (passion fruit, peach) aromas underlined by notes of vanilla. Very round, generous and long in the mouth, it offers a perfect balance between roundness and freshness.

Food pairing

It will accompany your white meats as well as your fish or even alone as an aperitif.
