Vinification and maturing
Destemming of the grape, lightly crushed before fermentation in stainless steel tanks using selected yeasts at a temperature of 28ºC with twice daily remontage. Long maceration (15 days ) with regular punching of the cap to extract structure and tannins. After 50% of the wine is run off to tank for 5 months maturation with french oak staves prior to bottling.
Deep coloured. The nose shows spice, blackberry and cassis and a hint of oak. The palate is round, smooth and spicy. It can be kept on cellar for 5 years.
Grilled meats, charcuteries, roast beef or lamb, excellent with cheeses.
