Vinification and maturing
Our work begins in the vineyard with a precise and meticulous selection of the most suitable vineyard to adapted the production of this type of wine : the maturation, the hygiene and the age of the vineyard are precisely studied.
During the fermentation, we do not use any SO2, nor any other additive. Pumping over the wine to release the full potential of the fruit.
Our goal is to avoid any contact with oxygen. From the grape transformation until bottling, we control the dissolved oxygen. Moreover, we do the microbiology analyses regularly to avoid any contamination and guarantee a perfectly stable wine.
This wine has a beautiful scarlet red color. A blend with intense aromas of ripe red fruits, truffle and cinnamon. The delicious flavors of red fruits are exceptionally well rounded in the mouth.
