Vinification and maturing
The grapes are picked at their optimal ripeness to express the maximum potential of the variety.
The work on the grapes is carried out in a neutral gas atmosphere to minimise risks of oxidation of the musts.
The grapes are de-stemmed and cooled to 8°C before being sent to the press to extract the must. Fermentation lasts between 15 and over 30 days depending on the levels of clarification and temperature used. This wine is vinified in temperature-controlled stainless steel vats at low temperature so as to keep all the freshness and integrity of the aromas.
Finally, after light fining, the wine is bottled early to maintain all its freshness.
The wine boasts a bright yellow color with tints of green. The nose reveals aromas of fresh blackcurrant, pear and mango, backed by nuances of almonds and hazelnut with floral notes of acacia and lily, grapefruit and orange blossom. The lovely long finish is marked by a fine mineral touch.
This wine will personalize your appetizers. It will be the perfect companion for fish in sauce, white meats and blue cheeses.
