The Minervois, is a vast amphitheater oriented South, protected by the Black Mountain behind, thirty kilometers far from the sea, under the influence of the Mediterranean Sea.
Grape Varieties
60% Syrah, 30% Carignan, 10% Grenache.
Vinification and maturing
Traditional method. Separated by grape varieties. Advanced maceration during 25 days with very gentle interventions to preserve the finesse of the tannins and the wine has a depth and richness of fruit that gives it appeal and interest.
Tasting notes
Deep garnet color. Powerful and complex fragrance, aromas of prunes, ripe cherries. The aromatic palette continues with more complex notes slightly mineral and ends with a series of spices (cloves). Full and creamy mouth, very fine tannins, superbly spicy finish.
Food pairing
Traditionally served with roasted duck, game meat, prime rib and cheeses.
