Vinification and maturing

Located in Pennautier near Carcassonne (south of France), this wine benefits from a terroir which combines clay-limestone soils, the Mediterranean heat, an Atlantic influence and the coolness of the mountains
– Harvested at optimum ripeness
– the grapes are crushed, destemmed and pressed
– the juice is cold-settled
– fermentation at low temperature (16â°C) in stainless steel tank
– aged on the lees.

Tasting notes

Bright gold color with green tints. Elegant wine with notes of pineapple and fresh fruits. Well balanced between freshness and grapefruit, citrus, and herbaceous aromas. Round and delicate with perfect acidity from start to finish.

Food pairing

Best served with shell-fish, seafood, cold lemon dressing salads and asparagus dishes. Excellent as aperitif or with sushi.
