Vinification and maturing
Harvest : night time harvesting, partly hand-picked and partly mechanical.
Grape destemming, cold maceration. Vinification at low temperature (16°C) in stainless steel tank. Then, early bottling to keep all the aromas intact.
Very bright gold colour with green tints. Very fruity on the palate with a good acidity. Well balanced between freshness and grapefruit, gooseberry and herbaceous aromas.
Best served with shell-fish, seafood, cold lemon dressing salads and asparagus dishes. Excellent as aperitif or with sushi.
