Vinification and maturing

Harvest at night. Carbonic maceration (saturation of the tank with C02) to extract a maximum of fermentation aromas.
Clarification of musts at low temperature, Fermentation under controlled temperature at 16-17 ° C. Aging in stainless steel tanks. Regular racking preserves maximum fruit and concentration.

Tasting notes

Color: A perfect limpid light pink dress.
Nose: A nose with the scent of red and floral fruits.
Taste: Flattering and lively attack. Refreshing and pleasant mouth, of remarkable length where the amateur can take pleasure in identifying the whole palette of tangy red berries (redcurrant, raspberry, sour cherry).

Food pairing

To enjoy as an aperitif or around a barbecue with friends. Asparagus – Ham – Veal stew – Melon – Young Cantal – Grill.
