Schist soils. These soils are deep and free draining, allowing them to absorb and retain warmth to aid ripening.

Grape varieties

Syrah, Grenache, Mourvèdre, Carignan.

Vinification and maturing

Destemmed grapes and traditional vinification.
Long vatting at high temperature (25 to 30 ° C). The temperature and the oxygen supply are controlled throughout the aging in order to preserve the freshness of the wines.
Harvest Partially manual.

Tasting notes

Powerful nose of blackcurrant, blackberry, sweet spices, liquorice. The palate is powerful, concentrated but very elegant, with a chocolatey woody note.
To taste between 16 ° and 18 ° C, from now up to 5 years.

Food pairing

Perfect with most red meats, dishes in sauces, grilled meats or cheeses.
