Vinification

De-stemming of the grapes, cold pre-fermentation maceration for 2 days, 1 to 2 daily pumping over during fermentation. Malolactic fermentation.

Ageing

65% of the cuvée is aged in barrels for 5 months.

Tasting notes

Color: Deep, beautiful cherry red.
Nose: Intense with red and black fruit (blackcurrant) and sweet spice and liquorice flavours.

Food pairing

Serving temperature: Between 16 and 17°.
To be enjoyed with meats in sauce, roasted meats, game, cheeses.
